- 2 tbsp olive oil
- 4509 pork sausages
- For the batter:
- 125g plain flour
- pinch salt
- 2 eggs
- 300ml pint milk
- 2 garlic doves, finely chopped
- 2 tbsp chopped fresh chives
Preheat the oven 220C Gas 7. Heat the oil in a small roasting tin on the hob, tilting the tin so that the oil covers the bottom and sides. Add the sausages and place in the oven for 10 minutes, shaking the tin occasionally, until browned.
Meanwhile, make the batter:
Sift the flour and salt into a bowl. Make a well in the centre and add the eggs and a little of the milk. Whisk the eggs and milk together, gradually adding the flour to make a paste. Gradually whisk in the rest of the milk to make a smooth batter. Stir in the garlic and chives.

- 600ml/1pint organic milk
- 450ml/¾ pint organic cream
- 175g/6oz sugar
- The zest and juice of one orange
- ½ teaspoon of cinnamon
- 200g/7oz short grain pudding rice
Stir the organic milk, organic cream, sugar, zest and juice of one orange and cinnamon in a pan over a low heat until the sugar is dissolved, then allow the milk mixture to come just to the boil.
